Danish Pastry Dough

Eccoci alla mia seconda esperienza nella preparazione della pasta sfoglia, mi ero già cimentata una prima volta per fare i croissants e, sebbene la prima ricetta sia stata soddisfacente nel sapore, mi ero ripromessa di riprovarci perché non ho ottenuto quel risultato tipicamente croccante nella sfogliatura. Questa è la pasta sfoglia preferita da Paul Hollywood, dal suo libro "How to bake", perchè come lui afferma, estremamente versatile, può essere usata in svariate delizie per la colazione del mattino, dalle girelle alle mele ai pasticcini alla crema. E’ essenziale però usare del burro di ottima qualità. Il procedimento e la tecnica di piegatura (ma non gli ingredienti) è lo stesso che lui usa per i croissants e che io ho seguito passo passo, anche aiutata dalle foto incluse nel libro. Una volta preparata la sfoglia ho scelto di farne delle deliziose paste alla crema di limone che vi spiegherò però nei prossimi giorni...

Preparazione

Mettere la farina nella ciotola del mixer con il gancio, unire il sale e lo zucchero in un lato della ciotola e il lievito dall’altro lato. Aggiungere le uova, l’acqua e il latte, impastare a velocità bassa per 2 minuti, poi per  6 minuti a velocità media. Rovesciare la pasta su una superficie leggermente infarinata e formare una palla. Spolverare con la farina, mettere nella pellicola e far freddare in frigorifero per 1 ora. Su un piano infarinato, stendere la pasta raffreddata in un rettangolo, di circa 50 x 20 cm e spessa circa 1 cm. Appiattire il burro in un rettangolo di circa 33x19 cm, colpendolo con il matterello. Disporre il burro sulla pasta così da coprire il fondo per i 2/3. Assicurarsi che sia posizionato ordinatamente fino ai bordi e ripiegare la pasta rimanente sul burro per 1/3. Ora, delicatamente tagliare i pezzi di burro eccedenti, senza andare attraverso la pasta, e metterli sopra la pasta che è stata appena piegata verso il basso. Ripiegare la metà inferiore della pasta. Si otterrà così un panetto di 2 strati di burro e 3 di pasta. Pizzicare i bordi delicatamente per sigillare la pasta. Mettere di nuovo la pasta nella pellicola e far indurire il burro in frigorifero per 1 ora. Prendere la pasta e rovesciarla su un  piano infarinato, con il lato corto verso di voi. Ora stendere un rettangolo di circa 50x20 cm, come prima. Questa volta piegare 1/3 della pasta e poi piegare il terzo dal basso verso l’alto. Questo è denominato un singolo giro (piega). Rimettere la pasta nella pellicola e in frigo per 1 ora. Ripetere questa fase altre due volte, rimettendo la pasta in frigo per 1 ora dopo ogni giro. La pasta ora ha bisogno di essere lasciata in frigo per 8 ore, o tutta la notte, a riposare e crescere leggermente. A questo punto è pronta per l’uso.

Ingredients
500 g strongwhite bread flour, plus extra for dusting
10 g salt
80 g caster sugar
10 g istant yeast
2 medium eggs
90 ml cool water
125 ml tepid full-fat milk
250 gr chilled unsalted butter, preferably a good-quality

-Put the flour in the bowl of a mixer fitted with a dough hook . Add the salt and sugar to one side of the bowl and the yeast to the other. Add the eggs , water and milk and mix on a slow speed for 2 minutes, then on a medium speed for 6 minutes.
-Tip the dough out onto a lightly floured surface and shape it into a ball. Dust with flour, put into a clean plastic bag and chill in the fridge for an hour.
- On a lightly floured surface, roll out your chilled dough to a rectangle , about 50 x 20 cm and about 1 cm thick. Flatten the butter to a rectangle about 33x19 cm, by bashing it with a rolling pin . Lay the butter on the dough so that it covers the bottom two-thirds of it. Make sure that it is positioned neatly and comes almost to the edges.
-Fold the exposed dough in the top down one-third of the butter. Now gently cut off the exposed bit of butter, without going through the dough , and put it on top of the dough you have just folden down.
Fold the bottom half of the dough up.  You will now have a sandwich of two layers of butter and three of dough .Pinch the edges lightly to seal in the butter. Put the dough back in the plastic bag and chill for an hour to harden the butter.
-Take the dough out of the bag and put it on the lightly floured surface  with the short end towards you. Now roll it out to a rectangle about 50x20 cm , as before. This time fold fold up one-third of the dough and then fold the top third down on top. This is called a single turn. Put the dough in the plastic bag and chill for another  hour. Repeat this stage twice more, putting the dough back into the fridge for an hour between turns
- Your dough now needs to be left in the fridge for 8 hours, or overnight, to rest and rise slightly . It is ready to use .
